Our
cellar
Bodegas Tradicion is among the other cellars of the Appellation
of Origin Jerez – Xèrés – Sherry, the
only one committed exclusively to the production of the oldest
Sherries qualified by the Regulatory Board. All types of Sherry
that we produce have been classified by the Guarantee of Origin
Regulatory Board as V.O.S. – very old sherry or
vinum optimum signatum – a wine which has been aged
for more than 20 years, or V.O.R.S.– very old rare
sherry vinum optimum rare signatum – a wine which
has been aged for more than 30 years.
Our cellar was built during the 19th century, and it is located
in the historical district of Jerez, inside the area which was
the walled city at the times of the Muslim Empire. With small
windows, thick walls, sand soil, high ceilings and barely illuminated,
our cellar is an excellent example of the architectural tradition
of the beginning of the 19th century.
Located in the highest part of Jerez and facing south east,
as many of the cellars in the area, our bodega receives the
influence of predominant winds, as well as minimum exposure
to sun light and maximum humidity which ease the conservation
and evolution of our wines.
